1 quart apple juice or apple cider
1 gallon water
2-3 sprigs rosemary or 2 tablespoons chopped rosemary
1 Tablespoon cloves
1 large apple
1 orange or 1 cup orange juice
1 onion
1 Tablespoon minced garlic
1 cup salt
½ cup brown sugar
1 Tablespoon peppercorns
3-4 bay leaves
Traeger apple honey poultry seasoning or your favorite turkey rub
Dissolve salt and brown sugar in water and then cool. Place the whole turkey breast in the bottom of a large bowl, add in apple juice, water/sugar/salt mixture and all spices and ingredients. Brine for 24-36 hours before putting on the smoker. When ready to put on the smoker, take out of brine, wash off the remaining salt and other seasonings and pat dry. Rub the outside of the turkey with poultry seasoning (I like the Tradeger apple honey poultry seasoning) or just garlic salt and pepper.
Set the grill to 275 degrees. Once it has reached temperature, place the turkey on the smoker and insert a temperature probe or meat thermometer. Cook until the internal temperature has reached 165-170 degrees. Remove from heat and let rest for 30 minutes, then slice and enjoy.
*Calculate 30-40 minutes per pound to smoke the turkey in order to calculate time.
